# Pomelo Salad with Ranch

## Ingredients

- 2 cups iceberg lettuce, cut into large pieces
- 1 can corn
- 1 pomelo, peeled and segmented
- Ranch dressing, ready-made or homemade (yogurt, labneh, lemon, garlic powder, 1 tsp ground coriander and oregano)
- Parmesan cheese
- Fresh mushrooms or pomegranate seeds (optional)

## Method

1. Toss the lettuce with the pomelo and a little dressing and place on a serving plate.
2. Add the corn, garnish with pomelo, a sprinkle of parsley and dressing on top, add the mushrooms or pomegranate, and finish with parmesan.
