# Beetroot Soup

## Ingredients

- 3 beetroots, boiled
- 1 large carrot
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- 2 tbsp butter
- 2 stock cubes
- 1 liter water
- 1/2 cup cream
- Salt and black pepper to taste

## Method

1. Fry the onion in the butter with the garlic until soft, add the carrot, water and stock cubes and cook until tender. Blend with the beetroot, return to the heat and add the cream.
