## Ingredients

### Salad

- 2 cups sweet corn
- 1/2 cup small white beans, boiled
- 1 cup tomato, finely diced
- 1 cup mixed bell peppers, finely diced
- 1/4 cup spring onions, finely chopped
- 1 celery stalk, finely chopped
- Blanched almonds, chopped, untoasted, for serving

### Dressing

- 1/4 cup olive oil
- 1 tbsp vinegar
- 1 tbsp sugar
- 1 tbsp mustard
- 2 tbsp lemon juice
- Salt and black pepper to taste

## Method

1. Mix all the salad ingredients in a bowl.
2. Whisk the dressing and add to the salad, then finish with the almonds.
