## Ingredients

- 1 large eggplant, fried
- 2 tbsp lemon juice
- 1 tbsp chopped coriander
- 1 tsp crushed garlic
- Salt
- Sumac
- 1 tbsp chopped hot chili
- Pine nuts and parsley, for garnish

## Method

1. Arrange the eggplant on a serving plate.
2. Mix the dressing ingredients and spread over the fried eggplant. Garnish with pine nuts and parsley.
