## Ingredients

### Chicken

- 1 whole chicken (about 1 kg) or boneless, cut into quarters and soaked in lemon, vinegar and oil

### Chicken marinade

- 2 tbsp yogurt
- 2 tbsp ketchup
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 tbsp hot sauce
- 1 tbsp tomato paste
- 1/2 tsp each of black pepper, ground cardamom and ground cinnamon
- A pinch each of nutmeg and ground cloves
- 1 tsp salt

### Rice

- 2 cups basmati rice
- 1 chicken stock cube
- Salt
- Black pepper
- Whole five-spice (cloves, cardamom, cinnamon, nutmeg, black pepper, bay leaf)
- 4 tbsp vegetable oil

### Onion mixture

- 1/4 cup olive oil and 2 tbsp vegetable oil
- 4 large onions, sliced
- 1 head of garlic, sliced
- 1 small tub yogurt
- 2 tbsp hot sauce (or more to taste)
- 1/2 cup golden raisins, soaked

### Garnish and smoking

- Fried almonds and fried raisins
- 1 piece of charcoal
- Vegetable oil
- Aluminum foil

## Method

1. Marinate the chicken with the marinade ingredients overnight, or for at least 4 hours, in the fridge.
2. Heat the olive and vegetable oil, soften the onions, then add the garlic until soft. Add the yogurt, hot sauce and raisins and let it come together with a pinch of salt (depending on the hot sauce) and black pepper.
3. For the rice: put the whole spices in a spice bag and boil 3 1/4 cups water with the stock cube and oil for 5 minutes. Add the soaked, drained rice, bring to a boil, then lower the heat until cooked.
4. Bake the chicken covered with foil for about an hour and a half depending on its size, then uncover to brown at the end.
5. Light the charcoal well.
6. On a serving platter, layer the rice, the onion mixture and the chicken, garnish with almonds and cover tightly with foil for smoking.
7. Place the charcoal in a piece of foil at the edge of the platter, drizzle with oil and cover immediately so the smoke does not escape. Leave until the smoke settles, then serve.

## Notes

You can smoke each component separately and then assemble the dish.
