# Apple Salad with Special Dressing

## Ingredients

### Salad

- 2 cups lettuce, torn by hand
- 1 cup rocket
- 1 tart green apple
- Pomegranate seeds
- 1 cup fresh mint leaves

### Dressing

- 1/4 cup yogurt
- 1 tbsp lemon juice
- 1 tbsp pomegranate molasses
- 2 tbsp Italian dressing
- 1/4 cup parsley
- 1/4 cup dill
- Salt

## Method

1. Layer the lettuce, then the rocket, apple and mint leaves.
2. Blend the dressing, pour over the salad and scatter the pomegranate seeds and mint.
