# Refreshing Peach Salad

## Ingredients

### Salad

- 2 cups lettuce, chopped
- 1 cup rocket, chopped
- 1/4 cup parmesan
- 1/2 cup feta cheese
- 1 large peach, sliced
- Raisins, walnuts and a pinch of fresh thyme for the top

### Dressing

- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp lemon juice

## Method

1. Arrange the greens on a plate, then the peach and parmesan.
2. Whisk the dressing and pour over the salad. Top with walnuts, raisins, feta and a pinch of oregano.
