## Ingredients

### Tuna mix

- 1 can tuna in oil
- 1 tbsp chopped dill
- 1 tbsp lemon juice
- 1 tbsp spring onion
- 1/4 cup mayonnaise
- 1/4 tsp salt
- 1/4 tsp black pepper

### Sandwich

- Jalapeños
- Tabasco sauce
- Ready-made or homemade pesto
- Toast bread or buns
- Dill pickle slices
- Ripe avocado pieces
- 1 tbsp butter for toasting the bread

## Method

1. Mash the tuna very finely with a fork and add the dill, lemon, mayonnaise, spring onion, salt and black pepper (or use a hand blender; I prefer a fork).
2. Brush the bread with oil and toast it in a pan with a weight or on a grill, then spread one side with pesto.
3. Add the tuna filling, jalapeños and Tabasco, and close the sandwich.
