Kofta with Tahini or Tomato
Ingredients
Kofta
- 500 g beef
- 2 small tomatoes
- 1 green bell pepper
- 1 medium onion
- 1/2 head of garlic
- 1 cup chopped parsley
- 2 tbsp tomato paste
- 2 tbsp pomegranate molasses
- Salt
- 1 tbsp mixed spices
- 1 tbsp paprika
- 1 tsp black pepper
- 1 tbsp Knorr stock powder
For the tray
- Potato, sliced into rounds
- Tomato, sliced into rounds (for the tomato version)
- 1 chili pepper
- Olive oil
- 1/4 cup water
- Tomato paste for the top
Tahini sauce
- 1 cup tahini
- Juice of 1 lemon
- 2 garlic cloves, crushed
- Salt
- About 1 1/2 cups water
Method
- Grind the vegetables in a food processor, add to the meat with the spices and shape into discs like burgers.
- For the tomato version, add tomato and potato rounds; for the tahini version, potato only, with a chili on top.
- Oil the tray with olive oil, arrange the kofta, drizzle with olive oil, 1/4 cup water and a little tomato paste. Cover with foil and bake about half an hour, then uncover and brown the top.
- For tahini: drain any liquid from the tray. Mix the tahini with the lemon juice, garlic and salt, taste and adjust, then add water until runny (about 1 1/2 cups). Pour over the kofta and potatoes, let it boil once and serve.
