Strawberry and Rocket Salad

Ingredients

• 2 cups strawberries, sliced
• 2 bunches rocket, washed and torn by hand
• 1/2 cup walnuts
• 1/2 cup oil
• A squeeze of lemon
• 1/2 cup balsamic vinegar
• 2 tbsp honey
• 1 cup feta cheese, cubed
• 2 cups lettuce, chopped

Method

1. Whisk the oil, lemon, vinegar and honey together well.
2. Toss the strawberries, lettuce and rocket together.
3. Layer the strawberry mix, then the feta, then repeat. Garnish with strawberries and walnuts, and finally add the dressing half an hour before serving.
