Smoked Shish Tawook
Ingredients
- 1/2 chicken breast, cubed
- Ready-made shish tawook mix, or a marinade of: 4 tbsp yogurt, 2 tbsp tomato paste, 1 tbsp paprika, 1 tbsp black pepper, 1 tbsp salt, 1 tbsp cinnamon, 1/2 tsp cloves, 1/2 tsp cardamom, 1/2 tsp nutmeg, 2 tbsp vinegar, 1 tbsp ground coriander, 2 tbsp lemon juice, 2 tbsp olive oil
- Mixed bell peppers, cubed
- Mushrooms
- 1 onion, cubed
- Wooden skewers, soaked in water
- 1 piece of charcoal
- 1 tbsp olive oil for the charcoal
- Olive or vegetable oil for grilling
Method
- Thread the chicken onto the skewers, alternating with pepper, onion and mushroom, until done.
- Heat a pan well with a drop of oil and cook the skewers without moving them much, about 4 minutes per side until cooked (you can also grill them in the oven under the top grill).
- Light the charcoal and prepare a piece of foil with oil. Place it in the middle of the pot with the charcoal and cover to smoke the skewers. Serve with rice or garlic sauce and fries.
