Lemon Cake

Ingredients

Cake

• 1/2 cup vegetable oil
• 1 cup powdered sugar
• 1 1/2 cups flour
• Juice of 1 whole lemon
• Zest of 1 lemon
• 1/4 cup milk
• 2 eggs
• 1 1/2 tsp baking powder

Glaze

• 2 tbsp butter
• 2 tbsp powdered sugar
• 1/4 cup fresh lemon juice

Method

1. Mix the oil and sugar, add the eggs and beat well, then add the milk, flour and baking powder and beat, then the lemon zest and juice.
2. Pour into a tin greased with butter and dusted with flour.
3. Bake in a hot oven at 180°C for 45 minutes.
4. Glaze: heat the ingredients together, stirring until thickened, and pour over the cake.
