Sweet and Sour Chicken with Pineapple
Ingredients
Chicken and coating
- 500 g chicken, cubed
- 2 tbsp cornstarch
- 2 tbsp flour
- A pinch of garlic powder
- A pinch of paprika
- A pinch of black pepper
- Salt
- 1 tbsp soy sauce
- 1 tsp baking powder
- 1/4 cup water
- Plenty of oil for frying
Sauce
- Pineapple juice from the can
- 1 tbsp vinegar
- 1 tbsp honey or sugar
- 1/4 cup soy sauce
- 1 tbsp cornstarch
Vegetables
- 1/4 cup sesame oil
- 2 tbsp vegetable oil
- 3 garlic cloves, crushed
- 2 tbsp fresh ginger, crushed
- 1 onion, finely chopped
- 1 1/2 cups mixed bell peppers
- 1 can pineapple or fresh pineapple
- Sesame seeds and spring onions, for garnish
Rice
- 2 cups basmati rice, soaked
- Salt and oil
Method
- Marinate the chicken cubes in the coating ingredients for at least an hour.
- Deep fry in plenty of oil and set aside.
- Heat the sesame and vegetable oil, soften the onion and peppers, add the garlic and ginger, then add the sauce ingredients and set aside.
- Cut the pineapple into cubes and grill it.
- Rice: 1 1/2 cups water per cup of rice with salt and a little oil. Boil until the water is absorbed, then lower the heat.
- If you have a whole pineapple, you can hollow it out and use it as a serving bowl.
- Finally, add the chicken and pineapple to the onion, peppers and sauce; if it needs liquid, add about a cup of water. Garnish with sesame and spring onions and serve hot.
