Dough
- 7 cups flour
- 1 cup olive oil
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp milk powder
- About 2 1/2 cups warm water for kneading
Filling
- About 1 kg fresh thyme, cleaned and dried
- 2 onions, grated
- 1 tbsp citric acid (lemon salt)
- 4 tbsp sumac
- 1 tsp salt
- 1/2 cup olive oil
For rolling and baking
- 1 cup olive oil or more
Method
- Knead the dough ingredients well and let it rest in a warm place for at least an hour.
- Mix the filling ingredients together and let them sit for an hour as well.
- Divide the dough into about 10 equal balls.
- Oil the work surface and stretch each ball thin by hand, sprinkling oil as you go. Place the thyme in a strip down the middle, fold a little from the right and a little from the left, add more filling, close one side and fold the other over it. Let it rest.
- Preheat the oven and oil a tray.
- Once rested, stretch each filled piece again by hand with olive oil until thin, bake until golden top and bottom, and brush with oil.
