Kofta with Tahini

Kofta with Tahini

Ingredients

Kofta

  • 500 g beef
  • 2 small tomatoes
  • 1 green bell pepper
  • 1 medium onion
  • 1/2 head of garlic
  • 1 cup chopped parsley
  • 2 tbsp tomato paste
  • 2 tbsp pomegranate molasses
  • Salt
  • 1 tbsp mixed spices
  • 1 tbsp paprika
  • 1 tsp black pepper
  • 1 tbsp Knorr stock powder

For the tray

  • Potato, sliced into rounds
  • 1 chili pepper
  • Olive oil
  • 1/4 cup water
  • Tomato paste for the top

Tahini sauce

  • 1 cup tahini
  • Juice of 1 lemon
  • 2 garlic cloves, crushed
  • Salt
  • About 1 1/2 cups water

Method

  1. Grind the vegetables in a food processor, add to the meat with the spices and shape into discs like burgers.
  2. Add the potato rounds and a chili on top.
  3. Oil the tray with olive oil, arrange the kofta, drizzle with olive oil, 1/4 cup water and a little tomato paste. Cover with foil and bake about half an hour, then uncover and brown the top.
  4. Drain any liquid from the tray. Mix the tahini with the lemon juice, garlic and salt, taste, then add water until runny (about 1 1/2 cups). Pour over the kofta and potatoes, let it boil once and serve.
