Sun-Dried Tomato Pizza
Ingredients
Dough
- 1 1/2 cups flour
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 tsp yeast
- Warm water for kneading (about 1/2 cup)
Topping
- 1/3 cup sun-dried tomatoes
- 1/4 cup fresh mushrooms
- Black olives
- Parmesan and mozzarella cheese
- Pizza sauce
- Corn, bell pepper and basil leaves (optional)
- Barbecue sauce, for drizzling
- 1 to 2 tbsp fine semolina for dusting the tray (optional)
Method
- Mix all the dough ingredients, adding warm water gradually until it comes together (every flour differs; about 1/2 cup). Rest for half an hour.
- Roll out the dough onto a non-stick pizza tray.
- Prick the dough with a fork without reaching the edge, add the pizza sauce, then the vegetables: tomatoes, mushrooms, olives and basil.
- Make small balls of dough stuffed with mozzarella and place them around the edge with a little space between them.
- Sprinkle with parmesan and mozzarella. Preheat the oven to 180°C, bake from below until golden, then briefly from above to melt the cheese. Drizzle with barbecue sauce.
