Ramadan Bread
Ingredients
Dough
- 3 1/4 cups flour, sifted
- 1/2 tsp salt
- 1 1/2 tsp yeast (1 sachet)
- 1/4 cup vegetable oil
- 1 tbsp sugar
- About 1 1/2 cups warm milk, or 1 1/2 cups warm water (40°C) with 1/4 cup milk powder
Topping
- 1 egg, 1/4 tsp vinegar and 1 tbsp butter
- Sesame and nigella seeds
Method
- Combine the water or milk with the yeast and sugar and cover with plastic until it activates.
- Put the flour, salt and oil together, add the activated yeast and knead quickly by hand; it will be sticky, so oil your hands and the bowl. Cover with plastic and let it rise an hour in a warm place.
- Flour the surface and shape into one large bread, two medium or four small. Flatten slightly by hand and score lines with a knife or shape with your fingers.
- Brush with the butter and egg mixture, sprinkle with sesame and nigella, and let it rise another half hour.
- Bake in a hot oven at 200°C until golden underneath (about 15 minutes), then brown the top.
