- 4 tbsp olive oil for frying
- 4 bay leaves
- 3 cinnamon sticks
- 4 cloves
- 4 cardamom pods
- 1 onion, chopped
- 4 garlic cloves, chopped
- A pinch of nutmeg
- Salt and black pepper
Marinade
- 1/4 cup olive oil
- 1/4 cup lemon juice
- A pinch of salt and black pepper
- 1 tbsp crushed garlic
Method
- In a pressure cooker heat the oil and brown the chicken 4 minutes per side, add the whole spices, onion and garlic and toss until the chicken is golden.
- Add boiling water, let it come to a boil so the scum rises, remove it completely, then close the cooker for 17 minutes after it whistles.
- Place the chicken pieces in a tray, coat all over with the olive oil, lemon, garlic, salt and black pepper, and brown under the top heat of the oven at 200°C for 10 minutes.
Notes
A good way to serve a protein alongside any dish without too many flavors, yet still tasty.
