Popeyes-Style Fried Chicken

Ingredients
Chicken and soak
- 1 chicken (boneless preferred, or cut into 8 pieces)
- 1 large cup milk with 2 tbsp yogurt and 1/4 cup white vinegar
- Salt, vinegar and 2 tbsp olive oil for rubbing
Wet batter
- 1 large cup flour
- 1 tbsp black pepper
- 1 tbsp turmeric
- 1 tbsp paprika
- 1 tbsp garlic seasoning
- 1 tbsp onion seasoning
- 1 tbsp mixed spices (cardamom, cloves, cinnamon, nutmeg, black pepper)
- 1 1/2 cups water or sparkling water (sparkling preferred)
Dry coating
- 1 large cup flour
- 2 tbsp oats
- Chicken stock powder
- Black pepper, a little turmeric and crushed chili
- Oil for frying
Method
- Clean the chicken well, rub it with oil, lemon, vinegar and salt. Mix the milk, yogurt and vinegar and soak the chicken in it for at least an hour (overnight is best).
- Add all the spices to the first cup of flour with 1 1/2 cups water to make a thin batter. Add the chicken pieces and leave for at least 4 hours.
- In the second cup of flour, mix in the oats, chicken stock powder, black pepper, a little turmeric and crushed chili.
- Heat the oil well, then lower the heat before adding the chicken.
- Lift each piece from the batter, coat immediately in the dry flour and fry straight away; it takes 15 to 20 minutes. Once the surface is lightly golden, cover the pan and let it cook through on low heat.
Notes
Do not flip the chicken too often; each side needs about 5 minutes so the coating sets and does not fall apart.
