Bulgur Mujaddara
Ingredients
Mujaddara
- 1 cup lentils
- 2 cups bulgur
- 1 onion, finely chopped
- 1/2 cup olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 1 stock cube (optional)
- 1 onion, sliced and dusted with flour, for topping
Side salad
- Finely chopped tomato, parsley, lettuce, spring onion and chili with plenty of lemon, oil and salt
Method
- Wash the lentils well and boil in a liter of water for 20 minutes depending on the type; they should stay slightly firm.
- Wash the bulgur without soaking and drain well.
- In another pot (or the electric pressure cooker on sauté) soften the onion in olive oil, add the bulgur and stir 5 minutes, then add the lentils, 2 1/2 cups of their cooking water, the salt, black pepper and stock cube if using.
- Close the pressure cooker on the rice setting for about 14 minutes; it comes out fluffy.
- Fry the onion slices in the air fryer with a spray of oil or in plenty of olive oil, set aside and pour their oil over the cooked bulgur. Serve hot topped with the fried onions.
